Chicken Casserole
Ingredients
1 kg chicken breast cut into large chunks
1 tin cream of chicken soup
½ cup mayonnaise
1 tbsp curry powder
½ cup bread crumbs
1 cup grated cheese
Vegies – mushrooms, carrots & capsicum
Method
1. Cut up and place vegetables on the bottom of the crockpot and cover with raw chicken pieces
2. Mix soup, mayonnaise and curry powder together and pour over chicken and vegies.
3. Cover with breadcrumbs
4. Cover with grated cheese
5. Cook on high for4-5hrs.
6. Put in the over for 15 mins or so at the end to make the top go crispy.
My crockpot is ceramic, so i just chuck it in the oven to make the cheese crispy. Doesn't seem to hurt it, but might not work with all kinds of crockpots.

Braised Beef -Slowcooker
Braised Beef
Ingredients (serves 4)
2/3 cup plain flour
1kg blade steak, cut into 1.5cm thick slices
2 tablespoons olive oil
3 brown onions, thinly sliced
410g can beef consomme soup
carrot and parsnip mash, to serve
Method
Combine 1/2 cup flour, and salt and pepper on a plate. Lightly coat each piece of steak in seasoned flour.
Heat oil in a non-stick frying pan over medium-high heat. Cook steak, in batches, for 3 minutes each side or until browned. Transfer to slow cooker.
Add onions to frying pan. Cook, stirring, for 4 minutes or until tender. Sprinkle remaining 2 tablespoons of flour over onions. Stir until well combined.
Slowly add consomme, stirring constantly. Bring mixture to the boil. Pour mixture over beef.
Serve with carrot and parsnip mash.

Chicken and chickpea bake.
Ingredients (serves 4)
• 2 tablespoons plain flour
• 500g chicken thighs, cut into bite size pieces
• 1/4 cup olive oil
• 400g can chickpeas, rinsed, drained
• 1 garlic clove, crushed
• 1 brown onion, finely chopped
• 2 x 400g cans diced tomatoes
• 1 cup chicken stock
• 1/2 teaspoon white sugar
Method
1. Preheat oven to 180°C. Combine flour and salt and pepper in a freezer bag. Lightly coat chicken in seasoned flour.
2. Heat 2 tablespoons oil in a large frying pan over medium-high heat. Cook chicken for 5 to 6 minutes or until golden. Transfer to an 8-cup capacity baking dish. Add chickpeas.
3. Heat remaining oil in frying pan over medium-high heat. Add garlic and onion. Cook for 5 minutes. Add tomatoes, stock, sugar and salt and pepper. Reduce heat to medium. Simmer, stirring occasionally, for 10 minutes until thickened slightly.
4. Pour sauce over chicken, stirring to coat.
5. Cover with foil and bake for 30 minutes. Serve over couscous or pasta.
I've done it just up to step 4, then stuck it in the fridge overnight. I had to leave it in the oven for a little longer because it was cold when it went into the oven, but so long as you make sure your chicken is cooked through in the pan, all you have to do it heat it up. It's really yummy...even my DH likes it and he always tells me he doesn't like chickpeas.
Taco meat can be dont in advance and frozen for later use.
Buy some of those foil trays and make some lasagnes, or do chicken parmagiana in them, with the sauce and cheese over cooked, crumbed chicken breasts.
Most "saucy" things freeze well, like stroganoff etc. Then all you need to do it cook some rice or pasta and reheat the sauce.

Ingredients
1/2c lemon juice
1tbsp vegetable oil
1 garlic clove, crushed
1 teaspoon dried or fresh rosemary
¼ teaspoon salt
¼ teaspoon pepper
1 ½ to 2 lbs boneless skinless chicken breast.
Cook on low or medium for 3-5 hours depending on your slow cooker.

Ingredients
1 tbls Olive Oil
1 onion
1 clove of garlic ( or 1 tablespoon crushed garlic if you are like me)
1/4 teaspoon of Sambal Oelek (or chilli sauce to taste)
1 1/2 cups water
1/2 cup peanut butter
1 tbls Soy sauce
1/2 teaspoon sugar
1 tbls lemon juice
Method
Heat olive oil in pan, sauté’s chopped onion & garlic then add sambal oelek, reduce heat and stir well.
Add water then Peanut butter, bring slowly to the boil, strirring until mix becomes smooth, stir in Soy, sugar and lemon juice.
In the Crock pot put
3 large carrots cut into strips
1/2 cup frozen corn kernels
1 cup frozen broccoli
1 cup cauliflower
1/2 cup fresh green beans
Coated in flour and browned first 1/2 to 1 kilo beef or chicken cut into strips
Pour sauce over top and cooked for about 8 hrs on low

Ingredients
16-20 Chicken drumsticks
2 large onions sliced
4 crushed cloves of garlic
1 x 750mls of Italian cooking sauce
20 pitted Kalamata olives
1/2 cup white wine (which you can leave out if you've got the kiddies)
1 cup chicken stock
10 button mushrooms quartered
2 tablespoon crushed basil
1 tablespoon chopped rosemary
1 tablesppon sugar
Method
Put chicken into bottom of slow cooker
Pour all other ingredients on top
Put the lid on and cook on LOW for 8-10 hours or HIGH for 4-5 hours

Corned Beef and Coke - SlowCooker
Corned Beef and Coke
Ingredients
1 Piece of Corned Beef
2lt coke
3tbs honey
Method
Place 1 piece of corned beef and a 2 litre bottle of Coke into slow cooker, on low for about 6hrs about 15 minutes before you are ready to start serving, take it from the cooker, place on a baking tray and brush with a mix of 3 tables spoons of honey and 3 table spoons of any coke left over, place in oven on high heat. Basically 1 piece of corned beef and a 2 litre bottle of Coke. Put both into slow cooker, on low at about lunch time, about 15 minutes before you are ready to start serving, take it from the cooker, place on a baking tray and brush with a mix of 3 tables spoons of honey and 3 table spoons of any coke left over, place in oven on high heat. Wallah, dinner is served. The coke is a tenderiser (I am sure that everyone has seen what it does to a 1 or 2 cent piece), and the sweetness takes the saltiness out of the meat.

Drunken Garlic Crock-pot Roast
Don't be afraid of all the garlic in this! It gets really mild from the long cooking process and gives the meat a wonderful flavor.
Ingredients
7 hours 15 minutes 15 mins prep
2 1/2 lbs boneless Beef chuck roast, trimmed of fat
2 tablespoons vegetable oil
1/2 teaspoon salt
1/4 teaspoon pepper
2 medium onions, thinly sliced
18 cloves garlic, Minced (about 4 tbsp.)
2 Beef stock cubes
1/2 cup hot water
8 ounces lager beer
3 tablespoons brown sugar
1 tablespoon Dijon mustard
1 tablespoon cider vinegar
cornstarch (dissolved in water; for gravy)
Method
In a large skillet, heat 1 tbsp. of the oil and brown roast on both sides, seasoning with salt and pepper; remove to a platter and keep warm.
Add the remaining tbsp of oil to the pan and add the onions, cook until they just start to wilt then add the garlic, them cook until the onions are tender, a few minutes more.
Add the stock cubes to the hot water and stir to dissolve; add that to the skillet along with the beer, brown sugar, mustard, and vinegar; stir to mix well.
Pour mixture into the bottom of the crock-pot.
Place roast on top of liquid, cutting into pieces if it doesn't lay flat.
Set the crock-pot on low and cook for 7-8 hours.
Remove meat from crock-pot and pour liquid into a pan on the stove; heat to a boil, and mix a slurry out of the cornstarch and water; thicken pan liquid with slurry to make gravy.
Serve gravy over meat or with potatoes or noodles.

Beef Casserole
Ingredients
500g cheap steak (any will do), cubed
4 potatoes, peeled and cut into quarters
2 carrots, peeled and cut into thick slices
1 large onion, finely chopped
1 garlic clove, chopped thinly
1 can whole, peeled tomatoes
1 can Heinz Big Red tomato soup.
a dash of Wostershire sauce
a dash of white vinegar
Ingredients
Brown the steak in a frying pan until just brown.
Place evrything in the slow cooker, making sure everything is covered with liquid.
Stick the lid on top and put the slow cooker on to auto.
Cook for at least 6 hours, but 8 is best.

Lamb Chops - Slow Cooker

Ingredients
8 large lamb forequarter chops
1 brown onion chopped
1 large carrot diced
1 level dessertspoon sugar
1 teaspoon curry powder
1 teaspoon ginger
1 teaspoon mustard
Half a teaspoon mixed spice
2 tablespoons vinegar
2 tablespoons tomato sauce
Salt and pepper
Half a cup water
Method
Bung the lot into your slow cooker for at least 5 hours.
If you don't have a slow cooker, a covered casserole in a very low oven will do the trick.
Serve with mashed spuds and peas or beans.

Teriyaki Chicken- Slow Cooker

Ingredients
1/2 cup soy sauce
1/2 cup sugar
1/4 tsp garlic powder
3/4 tsp ground ginger
1 1/2 TBSP red wine vinegar
2 TBSP oil(olive is better)
All above mixed together
Chicken breast
Method
Place chicken in crockpot and pour sauce over. Cook on low for at least 6 hours- longer won't hurt it on low. Serve over rice

Ingredients
500gm chicken breast diced (big families may need more)
1 can cream of chicken condensed soup
500gm mushrooms diced
1 capsicum diced
1 onion diced
2 cloves garlic
1 carrot diced
1/4 - 1/2 packet frozen peas and corn
salt
pepper
cornflour
rice
Method
Put all ingredients in the slow cooker, EXCEPT rice and cornflour. Cook on high for 2 - 3hrs then on low for the remaining time (about another 5hrs).
Thicken at the end with corn flour

Lemon Garlic Chicken
Ingredients
4 chicken breasts boneless and skinless
2 teaspoons oregano
¼ teaspoon sea salt
¼ teaspoon crushed black pepper
Spray cooking oil
¼ cup chicken stock
4 tablespoons fresh lemon juice
4 cloves garlic crushed
¼ cup white wine
Method
Wash chicken and dry on paper towels.
Combine oregano, salt and pepper in a small bowl. Sprinkle on the chicken and rub it into the chicken breasts
Fry the chicken breasts until browned with the spray cooking oil.
Transfer the browned chicken to the crock-pot.
Combine the stock, lemon juice, wine, garlic and add to the crock pot.
Cover and cook on High for 3 hours or on Low for 6 hours.
